Culatello, the so-called King of cured meats, with a delicate and sweet flavour and a ruby colour, transparent in every slice, has the physical tenderness of a product of unrepeatable royalty. It is the heritage and wealth of that precious land shrouded in the romantic mists of the lower Parma area which lies along the right bank of the great Po River. It is a high-quality cured meat product obtained from the upper part of the pork leg. It boasts a few natural ingredients: salt, pepper, a little garlic infused in wine and a lot of time and skill.
Our Culatelli are produced as they once were: after a massage with Fortana wine and garlic, they are salted with salt and cracked pepper. Then they are aged, tied and, after a short drying, they begin the seasoning process that ends inside the historic cellars of the Antica Corte Pallavicina that date back to 1320.
